Grapefruit lemon bars

I feel so much like Liz Lemon recently. That’s probably a bad thing seeing that Tina Fey describes this character as a loser version of herself. Oh well. Here’s some lemony delicious baked goods.

The recipe comes from Over the Hill & On a Roll (Tastespotting or Foodgawker find).

The lemons and grapefruits came from my parents’ yard. They raise grapefruits, Navel oranges, kumquats, lemons, Satsumas, persimmons and pecans, plus a garden of things like broccoli and cantaloupe.

Crust

1/2 cup Confectioners Sugar
1 1/2 cup all-purpose flour
3/4 cup unsalted butter at room temperature

To make crust, butter a big pan, oven at 350. Combine everything with a mixer until it looks like dough. Press, bake 25 mins or until slightly brown.

Filling

1/2 cup all-purpose flour
2 1/4 cups sugar
1 cup grapefruit juice
2 tbsp lemon juice
Zest from 1 lemon
6 large whole eggs
1 large egg yolk
pinch of salt

Squeeze.

Get squeezy on some lemons and grapefruits. I suggest zesting first. I zested after squeezing, which was no fun with our Meyer lemons. They have very thin skin.

Mix flour and sugar, plus juices and zest. Whisk until sugar dissolves. Mix/beat eggs and salt separately. We also screwed up here and threw it all in together. That worked fine.

Once it’s all blendy, pour it right on the hot crust. Turn oven to 300 and put back in for about 40 minutes or until the middle is pretty jello-like, but not watery.

Chill, eat.

I have no pictures of the final product. Camera died. These bars were delicious. But if I was to make them again, I’d use a lot less sugar. They could use a little zing from the citrus.

Oh yeah. Sorry to Emery, who actually did all the work while I zested a lemon peel and tried to make a cocktail.
